Asian Roast Pork Sliders – from the American Diabetes Association 

Ingredients:

1 1/2 pounds coarsely ground lean pork
1-inch piece ginger, finely grated
1 large garlic clove, peeled and minced
1 scallion, trimmed and minced
2 tablespoons light soy sauce
2 teaspoons dark sesame oil
1 teaspoon cornstarch
6 whole-wheat hamburger buns

Preparation:

  • In a medium bowl, mix together pork, ginger, garlic, scallion, soy sauce, sesame oil, and tapioca starch. Shape into 6 individual patties.
  • In a dry nonstick skillet over medium heat, cook pork patties to medium doneness and golden on both sides, about 7 minutes total. Serve on whole-wheat bun.

Hot Spinach-Artichoke Dip – from Paula Deen’s collection of diabetes-friendly recipes 

Ingredients:

1 (10-ounce) package frozen chopped spinach
1/4 cup shredded reduced-fat pepper jack cheese
1 cup freshly grated Parmesan cheese
2 (14-ounce) cans artichoke hearts packed in water, rinsed and drained
1/2 cup light mayonnaise
1/2 cup fat-free ricotta cheese
2 teaspoons fresh lemon juice
1/4 teaspoon ground red pepper
Cut vegetables, crackers or pita chips for dipping

Preparation:

  • Preheat the oven to 350°F. Spray 1-quart baking dish with nonstick spray.
  • Cook spinach according to package directions.
  • Drain, let cool, and then squeeze dry. Transfer the spinach to a large bowl.
  • Topping: Combine pepper, jack cheese and 2 tablespoons of Parmesan cheese in small bowl until blended.
  • Pulse the artichoke hearts in a food processor until smooth.
  • Transfer artichokes to bowl with spinach. Stir remaining Parmesan cheese, mayonnaise, ricotta, lemon juice, and ground red pepper until well mixed.
  • Place in prepared dish. Sprinkle with topping.
  • Bake, uncovered, until filling is hot and cheese is melted, about 30 minutes.

Breakfast Burrito – from the Mayo Clinic 

Ingredients

1/2 cup chopped tomato
2 tablespoons chopped onion
1/4 cup canned corn
1/4 cup egg substitute
1 flour tortilla, 6 inches in diameter
2 tablespoons salsa

Directions

  • In small skillet, add chopped tomato, onion and corn. Cook over medium heat until vegetables are soft. Add egg substitute and scramble with vegetables until cooked through, about 3 minutes.
  • To serve, spread egg mixture in center of tortilla and top with salsa. Fold both sides of tortilla up over the filling, then roll to close. Serve immediately.
